It makes some things really complicated because how you calculate thing depends on where on the speroid you are.
Years ago I did a project where I had to convert OS Easting/Northing to the GPS cordinates that the Google Maps API uses. The maths to do the transformation was ridiculous as the OS used the proper curve.

Mr Anon, I was hoping somebody would point this out. That's why I typed "round" in quote marks.
The question about where would you end up if you travelled in a straight line, makes no mention of the shift in the earth's axis or wobble, known as irregular rotation, which is seasonal and irregular. Dependent on the form of travel this is almost impossible to answer.

Beyond the curve on netflix is a good documentary about flat earthers. They accidentally prove its curved twice and won't accept findings.
